-----Colonel Lampton's exceptional Fried Chicken ------------ One pound of chicken parts For the first dredge: 1/4 cup of all purpose flour For the second dredge: one egg, beaten with 1/2 cup milk and one pat warm butter For the third dredge: 1/2 cup of flour. 1 teaspoon salt 1 tablespoon lemon juice 1/2 teaspoon fresh ground pepper 1/2 teaspoon Cajun Spice blend (paprika, basil, garlic, cayenne) For the frying: 1 - 2 cups corn oil or equivalent Wash all the chicken parts and pat them dry. Then microwave them in a bowl or microwave-safe dish, for seven minutes at high heat, or longer if they have been cold. Idea is to get them partly cooked from the inside out. Meanwhile bring a big covered skillet with the frying oil up to temperature, around 375F, hot enough that anything dropped in sizzles instantly. Then take each chicken part and dredge it in the flour, then in the liquid egg/milk batter, then in the flour/spice mixture. Make sure it is fully coated. With tongs, put each piece into the frying oil. Let them fry for five minutes, then turn each piece and go another 5 minutes. Remove the pieces -- now fully browned -- to drain on a paper towel. Sprinkle with a pinch of Cajun Spice to kick up the flavor. Serve with mashed potatoes, steamed green beans, sliced tomatoes. And enjoy.
