---------Jen Lampton's Oatmeal Cookies---------- 3 cups quick or old fashioned Quaker Oats 1 cup dried cranberries 1 cup brown sugar 1 cup granulated white sugar 1 egg 1 stick butter 1 tsp vanilla 1 cup all purpose flour 1 tsp baking soda ................... Preheat your oven to 375. Mix the sugars and the butter until creamy. Mix in the vanilla and the egg. Mix in the flour, baking soda. Finally, add the oatmeal and cranberries and mix thoroughly. Spoon blobs of the cookie dough onto ungreased cookie sheets. Don't put them too close together or they will run and become one huge cookie! Bake for 8 minutes, remove and transfer them promptly to a wire rack to cool. When they are cooled off, keep them in a cookie jar so they don't dry out. Makes about 36 cookies. News Flash: you can skip the step of moving the cookies off the cookie sheets onto a wire rack, and put them directly into the cookie jar while they are still warm. This way you get a jar cake, not cookies, because after an hour in close quarters they join up. Although the jar cake is tasty, I decided that I prefer cookies, and so the wire rack cooling step is important.
