-----Colonel Lampton's exceptional Fried Chicken ------------ This most recent variant, posted April 2014, is an improvement over previous postings here from the Colonel. I call this variant my "6+6+6 plan with Pepper" since the actual cooking takes place in three segments of six minutes each, and there is plenty of successive black pepperings for max flavor. TWO Warnings apply: Warning #1: this involves hot oil, which is flammable. Not for kids! and be sure your CO2 fire extinguisher is handy. Warning #2: putting food into hot oil makes it froth up. Frothing can suddenly overflow your frying pan! Never fill your pan more than halfway. -----ingredients---- One pound of chicken parts For the first dredge: two eggs, beaten, with lots of fresh ground pepper. For the second dredge: half cup of bread crumbs with lots of fresh ground pepper. also add.. 1/2 teaspoon Cajun Spice blend (paprika, basil, garlic, cayenne). For the frying: 1 - 2 cups corn oil or canola oil, enough to bring your frying pan up to 1/3 full, not more than this. ---preparation--- Wash all the chicken parts and pat them dry. Then grind fresh black pepper onto them. Then microwave them in a bowl or microwave-safe dish, for six minutes at high heat. Idea is to get them partly cooked from the inside out. Did I mention to use pepper here? Meanwhile bring a big covered skillet with the oil up to temperature, around 375F, hot enough that anything dropped in sizzles instantly. Take the chicken parts out of the microwave and grind more pepper onto them. Then take each chicken part and dredge it in the egg. Then take each part and dredge it in the bread crumbs. Make sure each one is thoroughly coated. Extra pepper is good. With tongs, put the pieces into the hot frying oil. Grind some more pepper onto the pieces. Let them fry for six minutes, then turn each piece over and grind some more black pepper onto them, and go another six minutes. Remove the pieces -- now fully browned -- to drain on a paper towel. Grind some more black pepper onto them. Sprinkle with a pinch of Cajun Spice for even more flavor. Keep warm until ready to serve. Serve with mashed potatoes, steamed green beans, sliced tomatoes thin-sliced green onions, and of course some more fresh ground pepper. And enjoy!
