Chimichurri A flavorful Argentine sauce to accompany grilled beef. Also try it on other meats: grilled chicken, etc. Bill van Altena tells me that it is perfect for grilled salmon (I'll be trying this any day now.) This recipe makes about a cup, serves about 4 people. One half bunch fresh cilantro, chopped finely One half yellow onion, peeled and chopped finely One jalapeno pepper, slit, cleaned out, chopped 4 cloves garlic, crushed peeled and chopped 1/4 cup olive oil 1/4 cup balsamic vinegar 1/2 teaspoon fresh ground pepper Combine the ingredients in a small mixing bowl. Mix thoroughly. Best if it has a chance to sit for an hour or two. If you need to keep it overnight, pour into a tightly covered jar and refrigerate.
