--------- Mike Lampton's Famous Chili --------------- There are as many chili recipes as there chili chefs. A lot of them are bizarre. *REAL* chili is made out of chili peppers, with only minor amounts of other ingredients, and never beans. (Beans are terrific but ought to be served alongside the chili.) Here's my recipe: 1/4 cup olive oil one head of garlic (10-20 cloves) crushed & peeled 4 yellow onions peeled and coarsely chopped 1 lb chopped tomatoes, canned or fresh if in season 3 lbs (approx 10) Anaheim or New Mexico chili peppers 2 lbs (approx 10) Pasilla chili peppers 4 Jalapeno chili peppers 2 tablespoons crushed oregano 2 tablespoons ground cumin 2 tablespoons all purpose flour 1 quart beef stock, canned or homemade 2 lbs stewing beef* 1 tablespoon ground black pepper Fry the garlic and chopped onions over a medium heat, stirring frequently for 10-15 minutes. Transfer to a large heavy clean simmering pot. Add the tomatoes, oregano, and beef stock. Apply low heat and cover. Wash the chili peppers. Slit each one. Throw away the stem, seeds, and internal parts. Chop em up. Fry the chopped peppers in small batches with medium heat and a little oil, then add each cooked batch to the simmering pot. After working the peppers, your fingers will tingle for an hour or two. This is normal. Have a beer. Don't worry. *Beef works best for me, but other folks use pork, and C.J.Donnelly uses buffalo meat. No foolin! Whatever you use, cut the meat into slivers. Roll these in a powdery mixture of cumin, ground black pepper and flour. Brown the meat in 1/2 lb batches in the skillet over medium heat with a little oil stirring frequently. Add each batch to the simmering pot. Simmer for 6 hours stirring occasionally, then turn off the heat overnight. Your house will smell wonderful. Reheat for 2-3 hours the next day prior to serving. Goes great with side dishes: chopped green onions, grated cheeses, sour cream, salsa, baked or refried beans, and crusty bread. Serves 4-6 people. For a smokier flavor, substitute chipotle chilis for the pasillas. For more firepower, use more jalapenos or add 1 (one) habanero. -------------------------- enjoy -----------------------
