-------------- Mike Lampton's Aji ---------------------- Aji (pronounced a-HEEE) is a condiment sauce served at room temperature alongside savory dishes: meats, veggies (especially corn & beans), etc. It is widely enjoyed in South America, in particular Colombia. Make it up fresh to accompany a meal. It is not particularly fiery but instead is tangy and it adds lots of flavor. A few drops per serving is all you need. INGREDIENTS are: one lime at peak of ripeness one jalapeno pepper 1/4 ounce fresh cilantro 6 tbsp vinegar 1 clove garlic PREPARATION is quick: In a small cup-size serving bowl, combine the vinegar and squeeze the lime for all its juice. Wash the pepper, slit it, discard its top parts around the stem and the internal parts and seeds; then slice & chop it up very fine and add to the bowl. Crush the garlic clove, discard its papery skin, then chop it and add to the bowl. Wash and chop the cilantro, add it. Mix the ingredients thoroughly and let stand for a few minutes. Serve with a tiny spoon alongside your main dishes, and enjoy.
